Black Beans
Black beans are medium-sized, black-skinned oval beans. They are also known as Mexican black beans, Spanish, or black turtle beans. These beans have a matte black color with a small white line only on the ridge of the beam and the inside is cream colored.
These beans are low in fat, high in fiber and friendly to the digestive system.
Dark red kidney beans
These beans are medium-sized (about ½ inches long) and elongated. Its name is derived from its kidney shape and comes in a deep reddish-brown color. Red kidney beans are firm but have a rich creamy texture.
Light red kidney beans
These beans are medium-sized (about ½ inches long) and elongated. Its name is derived from its kidney shape and comes in a light red and amber in hue. They are also firm with a rich creamy texture.
Black eye peas
Black eye peas are slightly kidney shaped and plum with an irregular very dark circle formed on the ridge of the bean. These beans are creamy white in color and thin-skinned. They are savory but have a subtle earthy sweet flavor and a smooth, buttery texture.
Black Beans
Commonly referred to as strings beans, the string that once was their trademark can be seldom found in modern varieties. They vary in size but average about 4 inches in length. Usually deep emerald green in color and come to a slight point at either end. They contain tiny seeds within their thin pods.
Green beans are in the same family as shell beans, such as pinto beans, black beans and kidney beans. Yet unlike their cousins, green beans’ entire bean, pod and seed, can be eaten.
